Turning research into practical solutions

A major strength of Omelette is its ambition to connect research with the realities of the field. The project aims to generate knowledge and identify solutions that can ultimately support farmers, producers and the wider egg industry in their transition towards more sustainable and resilient production systems.

 At the Adro Ouest General Assembly in June 2026, the presentation of Omelette sparked discussions around the challenges of extending laying cycles and the opportunities this approach could offer for the future of the sector. These exchanges highlighted the importance of combining scientific innovation with practical experience and collaboration across the value chain.

We would like to thank Adro Ouest for providing the opportunity to present the project and for bringing together researchers, industry stakeholders and professionals committed to shaping the future of egg production.

It promotes a high-quality sector and the development of new products and focuses on the following areas: food safety, functional properties (foaming, emulsifying, and gelling power), nutritional qualities.
